James Strawbridge's Sweet and Sour Prawns

Serves 6-8

INGREDIENTS:

Spicy salt & pepper king prawns
Battered king prawns
Breaded king prawns

 

For the sweet and sour sauce:

250ml Black Bee honey
75ml Hot Lemon Sauce
2 tbsp Tracklements Ketchup
200ml orange juice

 

To serve:

250g brown basmati rice
1 cabbage, finely shredded
100g baked cashews and peanuts

 

METHOD:

  1. Preheat your oven to 200˚C and line a baking tray for the prawns.
  2. Make an easy sweet and sour sauce by heating orange juice, hot lemon sauce, honey and ketchup for 5-10 mins until it reduces and thickens slightly.
  3. Boil your rice for 25-30 mins, rinse and steam your cabbage for 3-4 mins.
  4. Cook the prawns in your preheated oven for 12 mins until golden and serve on a bed of cabbage, rice and spiced nuts. Drizzle with all the sweet and sour sauce before serving.
