James Strawbridge's Picnic Sausage Roll

When the weather is right, nothing beats a summer picnic. To complement our Picnic Bundle, James creates some sensational sausage rolls with seasoned pastry.

For the sausage mix:

For the pastry:



  1. Make the pastry by blitzing cold butter with flour and all the seasoning until you have a breadcrumb texture. Then add cold water until the pastry comes together. Wrap and set aside to chill for 1-2 hours.
  2. Roll out your pastry on a floured surface and mix all your sausage ingredients together in a bowl. Next form into a long sausage and wrap over with the pastry. Seal the edges and trim off excess pastry. Use a fork or your fingers to crimp the pastry together.
  3. Brush with egg glaze and bake in a preheated oven at 180˚C for 35 mins or until the pastry is golden and the meat is fully cooked. Allow to cool and serve with a 44 Foods picnic bundle.
