Ingredients:
For the sausage mix:
- 500g breakfast sausages, meat removed from the skins
- 2 tbsp crispy onions
- 10g soft blue cheese, diced
- 2 tbsp baby pickled onions
- 2 rashers of bacon, finely sliced
- Salt and pepper
For the pastry:
- 250g salted butter, diced
- 500g plain flour
- Cold water
- 1 tsp garlic powder
- 1 tsp mixed herbs
- 1 tsp wholegrain mustard
- ½ tsp white pepper
- ½ tsp fennel seeds
Method:
- Make the pastry by blitzing cold butter with flour and all the seasoning until you have a breadcrumb texture. Then add cold water until the pastry comes together. Wrap and set aside to chill for 1-2 hours.
- Roll out your pastry on a floured surface and mix all your sausage ingredients together in a bowl. Next form into a long sausage and wrap over with the pastry. Seal the edges and trim off excess pastry. Use a fork or your fingers to crimp the pastry together.
- Brush with egg glaze and bake in a preheated oven at 180˚C for 35 mins or until the pastry is golden and the meat is fully cooked. Allow to cool and serve with a 44 Foods picnic bundle.
