James Strawbridge's Waffles and Bacon

Time to dig out the waffle machine and put it to great use with this pancake alternative. Pile them high with streaky bacon, maple syrup and blueberries. Don't forget the coffee!

INGREDIENTS

For the waffles:

250g plain flour
1 tbsp caster sugar
1 tbsp baking powder
1 tsp or good pinch of salt
400ml whole milk
2 eggs
30ml rapeseed oil

 

For the maple bacon:

180g smoked streaky bacon
4-5 tsp Moose Maple Butter

Serve with Brazil Monte Cristo coffee and blueberries

Optional cinnamon sugar:

½ tsp ground cinnamon
1 tbsp icing sugar

  

METHOD:

  1. Whisk all the waffle ingredients together until you have a smooth golden batter. Allow to rest for 5 mins. Then use a waffle making machine to cook the waffles in batches for 3 ½ minutes.
  2. Cook the bacon with Moose Maple Butter in a hot oven or frying pan until caramelised and sticky.
  3. Serve a decadent waffle stack with maple bacon on top, blueberries scattered around the plate and a mug of strong coffee. Finish with cinnamon sugar and whipped cream.
