James Strawbridge's Chicken Wings with Hot Sauce

These spicy chicken wings work brilliantly on the BBQ but you can also use a hot grill. Crumble plenty of blue cheese over the top and serve with your favourite sides. Don't forget the napkins!

Serves 4

Ingredients:

1kg free range chicken wings
2 tbsp rapeseed oil
150g Moose Maple Butter
100ml Numero Uno Hot Sauce
100g blue cheese, crumbled
2-4 spring onions, finely sliced

 

For the BBQ rub:

1 tbsp finely chopped rosemary
1 tbsp paprika
1 tsp oregano
½ tsp cayenne pepper
½ tsp fennel seeds
½ tsp garlic powder
½ tsp sea salt
½ tsp cracked black pepper

 

Method:

  1. Marinade your chicken in a dry BBQ seasoning rub with chopped rosemary and rapeseed oil. Leave overnight in the fridge if time allows to develop flavour.
  2. Preheat your grill and cook your chicken wings over the hot embers. Turn regularly and baste with lots of melted maple butter to keep the chicken moist.
  3. After 10-15 mins cooking brush with hot sauce and cook for a further 5 mins. Check the chicken with a probe and make sure it’s above 73˚C. Then dress with an extra drizzle of hot sauce, sliced spring onions and crumbled blue cheese.
  4. Serve with plenty of napkins for some finger lickin' fun!
