Fish is so versatile that it’s a great choice for any meal at any time of day. Here are some ideas to help you plan your seafood shopping.
If you’re used to starting your morning with a traditional fry up, you can swap out the sausage or bacon for lightly fried fish. With a touch of seasoning, it can be a great twist on an old favourite.
One of our dishes of choice to kick off the day is smoked salmon with scrambled eggs. It’s a classic of course, and a healthy one too, as the salmon is rich in essential fats, known as omega fatty acids.
Crack open half a dozen eggs into a large jug or mixing bowl. Add milk and a little seasoning, then whisk until it’s pale yellow. Melt some butter in a saucepan over medium heat, then add the whisked eggs. Stir with a spatula until you have plenty of small pieces of cooked egg.
Then slice up a lemon, pop the eggs onto some toast, and top with the smoked salmon. Finally, add some pepper and the lemon wedges.
It’s an easy-peasy dish and a great way to start the day.
If you’re pushed for time or just a bit peckish, simply adding cooked prawns to a dish can turn it into something extra special.
How about a prawn Caesar salad? Heat some olive oil in a frying pan over medium heat. Add chopped bacon and white bread cubes. Cook until crisp and then transfer it to a serving bowl. Add washed, dried, torn cos lettuce leaves, peeled cooked prawns and Caesar salad dressing before sprinkling with some shaved parmesan.
We Brits love our fish and chips, but visiting the local chip shop during lockdown hasn’t been an option for many of us.
So how about a great way to cook up some beer-battered fish and chips at home?
For this one, you’ll need four large potatoes cut into wedges, some oil for frying – we recommend olive oil as a healthier option – a cup of self-raising flour, one large egg, a cup of beer and four medium-sized white fish fillets.
Firstly, coat the fish fillets in flour and then put more flour into a bowl. Add the egg and whisk, gradually adding beer until you have a smooth mixture.
You’ll then need to add your oil to a deep pot – up to about a quarter of its capacity – and heat it up. You can check if the wedges are ready to fry by dipping one in carefully. If the oil starts bubbling, it’s ready.
Add the potato wedges and cook them for around two minutes until they turn a nice golden colour. Remove them with a slotted spoon and sprinkle them with salt.
Now dip the fish fillets in the batter before placing them carefully into the oil. Turn them once while they’re cooking – they’ll be ready in two minutes.
