James Strawbridge’s Spiced Plum and Apple Crumble

Nothing says comfort food more than a crumble! This is a hug in a bowl. Serve with a generous dollop of double cream or custard. 

Serves 4

For the crumble :

Method:

  1. Preheat your oven to 180˚C. Make the crumble topping in a bowl by rubbing the flour and butter together. Once you get to a breadcrumb texture, add in the coconut and granola along with sugar. Spread out on a lined baking tray and cook for 20 mins.
  2. Cook the crumble filling in a large frying pan by caramelising the sugar, butter and cinnamon with plums and apple. Season with a pinch of salt. Cook for 15 mins until soft and sticky.
  3. Decant the filling into a pie dish and cover with the crumble topping. Return to the oven for 20 mins.
  4. Serve with double cream or custard.
