Emma’s Fig and Ginger Granola

Emma Ellice-Flint’s Fig and Ginger Granola

This granola is perfect for an easy-to-grab breakfast. Oats are not only an excellent source of fibre, but they also contain B vitamins, which are useful for energy production. Vitamin B6 is involved in hormone and neurotransmitter production in the body.

Emma’s Fig and Ginger Granola Main

Serves 4

  1. Preheat the oven to 200°C or 180°C fan.
  2. Mix the oats, oil, syrup and ginger together, leaving it clumpy, and tip onto a baking or parchment paper-lined baking tray.
  3. Bake for 10 minutes, then shake it around, and add the nuts and seeds. Bake it for a further 5 minutes.
  4. Pull from the oven and cool to go crunchy, then mix through the figs.
  5. Store in an airtight container. If the granola loses its crunch over time simply pop back into a hot oven for 5 minutes to bake and go crunchy.

To serve: Pop one portion into a small bowl, add yoghurt or kefir and top with berries.
